I love this Raw Granola because not only can you eat it alone as a mid day snack but also on top of smoothie bowls, coconut/almond yogurt or even better on pancakes which I’ll be sharing with you soon! Bookmark this one as a staple in your meal prep for when sweet cravings arrive.

half a cup GF rolled oats
6 pitted Medjool dates
¼ cup coconut flakes or shredded coconut
2 tsp of coconut sugar crystals
1 tablespoon of pumpkin seeds or any nut/seed you like!
Chop your dates and then soak in warm water for 10-15 minutes to create a softer consistency.
After soaked, drain, add to large mixing bowl. Blend remaining ingredients.
Combine, and enjoy!
Can be stored in fridge for 7 days!
